The “Chic” New Year’s Eve Aperitif with land and sea specialities
THE STARTER :
Grilled Baby Lobster with savoury zabaglione, served on a bed of baby spinach with crispy artichokes and fried sweet potatoes
THE FIRST COURSE :
Vialone Nano Rice with wild strawberries, marinated scampi tails with mint, and Andria burrata in fine shreds
THE FISH MAIN COURSE :
Swordfish Bite in a crust of Bronte pistachios, served on a delicate beetroot cream with smoked oil dressing
THE INTERMEZZO
The Creamy Delight fresh with mango flavour, enriched with drops of Batida de Coco
THE MEAT MAIN COURSE :
Tournedos of mature Irish beef, cooked medium-rare, wrapped in Lardo di Colonnata, scented with rosemary and lemon, with braised shallot and black garlic cream, accompanied by a bonbon of stewed purple potatoes
IL DESSERT :
The Milk Pearl with a heart of figs and walnuts, coated in white chocolate, set upon an exotic touch of passion fruit and gold dust as a wish for sweet good fortune
